Ingredients

For the Muffins:

1 cup rolled oats

1 cup whole wheat flour

1/2 cup packed brown sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 cup unsweetened applesauce

1/2 cup milk (dairy or non-dairy)

1/4 cup vegetable oil or melted coconut oil

1 large egg

1 teaspoon vanilla extract

1 cup diced apples (approximately 2 medium apples)

For the Crunchy Topping:

1/3 cup rolled oats

1/4 cup packed brown sugar

1/4 teaspoon ground cinnamon

3 tablespoons cold butter, cut into cubes

A pinch of salt

1/4 cup chopped nuts (such as walnuts or pecans) - optional

Instructions

Preheat Oven: Start by preheating your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing each cup with non-stick spray.

Mix Dry Ingredients: In a large mixing bowl, whisk together the rolled oats, whole wheat flour, packed brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until the ingredients are evenly combined.

Prepare Wet Ingredients: In a separate medium-sized bowl, whisk together the applesauce, milk, vegetable oil (or melted coconut oil), egg, and vanilla extract. Mix until the wet ingredients are smooth and well incorporated.

Combine Ingredients: Pour the wet mixture into the bowl of dry ingredients. Gently stir them together until just combined. Be careful not to overmix. Then, fold in the diced apples with a spatula until evenly distributed.

Create Crunchy Topping: In another small bowl, combine the rolled oats, packed brown sugar, cinnamon, and a pinch of salt for the topping. Add the cold butter cubes, and use a fork or your fingers to blend the mixture until it resembles coarse crumbs. If using, stir in the chopped nuts for extra crunch.

Fill Muffin Tin: Spoon the muffin batter into the prepared muffin cups, filling each about two-thirds full. Generously sprinkle the crunchy topping over each muffin for added texture and flavor.

Bake Muffins: Place the muffin tin in the preheated oven and bake for 18-20 minutes. The muffins are done when a toothpick inserted into the center of a muffin comes out clean.

Cool: Once baked, remove the muffin tin from the oven and allow the muffins to cool in the pan for about 5 minutes. Then, transfer them to a wire rack to cool completely.

Serve and Enjoy: These delightful Apple Oat Muffins can be enjoyed warm or at room temperature. They make a perfect addition to breakfast or an afternoon snack!
