Ingredients

2 medium zucchinis

2 fresh jalapeños

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

Cooking spray (or olive oil)

Instructions

Prep the Zucchini: Begin by washing the zucchinis thoroughly. After drying them, slice each zucchini into ½-inch thick rounds and set aside on a clean plate.

Prepare the Jalapeños: Take the fresh jalapeños and slice them in half lengthwise. If you prefer a milder heat, remove the seeds and membranes. Cut each half into strips or rounds that match the thickness of the zucchini.

Make the Breading Mixture: In a shallow mixing bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir the mixture well until all the ingredients are evenly distributed.

Prepare the Egg Wash: In a separate bowl, crack the 2 large eggs and beat them until the mixture is smooth and fully blended.

Coat the Vegetables: Take each zucchini round and jalapeño piece, dipping them into the egg wash. Allow any excess egg to drip off before transferring the coated vegetables into the breadcrumb mixture. Gently press the breadcrumbs onto the surface to ensure they stick, then place each piece on a plate until all have been coated.

Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes, which will prepare it for optimal cooking.

Air Fry the Rounds: Lightly spray the air fryer basket with cooking spray to prevent sticking. Arrange the coated zucchini rounds and jalapeño pieces in a single layer within the basket, making sure not to overlap them. You may need to cook them in batches for even results.

Cook: Air fry the rounds for 10-12 minutes, flipping them halfway through to achieve even crispiness. For extra crunch, lightly spray the vegetables with cooking spray during the cooking process.

Serve: Once golden brown and crispy, carefully remove the rounds from the air fryer and let them cool for a couple of minutes. Serve these delicious crispy jalapeño zucchini rounds warm, alongside your favorite dipping sauces like ranch or garlic aioli. Enjoy the delightful crunch and spicy kick!
