1 cup buttermilk

1 cup cornmeal

1/2 cup all-purpose flour

1 tsp paprika

1 tsp garlic powder

1/2 tsp cayenne pepper (adjust to taste)

1/2 tsp salt

1/2 tsp black pepper

Cooking spray

For the Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 large carrot, julienned

1/4 cup fresh cilantro, chopped

1/4 cup mayonnaise

1 tablespoon fresh lime juice

1 teaspoon honey

Salt and pepper, to taste

For the Tacos:

8 small corn or flour tortillas

Lime wedges, for serving

Hot sauce (optional)

Instructions

Marinate the Fish: Begin by soaking the fish fillets in a bowl filled with buttermilk. Allow the fish to marinate for approximately 30 minutes. This step helps in tenderizing the fish while infusing it with rich flavor.

Prepare the Breading: In a separate mixing bowl, combine cornmeal, all-purpose flour, paprika, garlic powder, cayenne pepper, salt, and black pepper. Stir well to ensure an even distribution of spices throughout the mixture.

Coat the Fish: After marinating, remove the fish fillets from the buttermilk, letting any excess liquid drip off. Dredge each piece in the cornmeal mixture, making sure to completely coat the fish. Arrange the breaded fish on a plate.

Air Fry the Fish: Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the breaded fish fillets in the basket in a single layer (you may need to work in batches). Lightly spray the tops of the fish with cooking spray. Cook in the air fryer for 10–12 minutes, flipping the fillets halfway through, until they are golden brown and fully cooked.

Make the Slaw: In a large mixing bowl, combine the finely shredded green cabbage, red cabbage, julienned carrot, and chopped cilantro. In a small bowl, whisk together the mayonnaise, lime juice, honey, salt, and pepper until smooth. Pour the dressing over the cabbage mixture and toss well to coat everything evenly. Taste and adjust seasoning, if necessary.

Warm the Tortillas: While the fish is cooking, warm the tortillas. You can do this in a dry skillet over medium heat for a few seconds on each side, or microwave them for a short time until they are pliable.

Assemble the Tacos: To assemble, lay a piece of crispy fish in each warm tortilla. Top generously with the zesty slaw and give a squeeze of fresh lime juice over the top. For those who enjoy a kick, drizzle some hot sauce.

Serve and Enjoy: Serve the crispy air fryer fish tacos with extra lime wedges on the side for additional flavor and enjoy this vibrant and delicious meal!
