1/4 cup low-sodium soy sauce

2 tbsp honey or maple syrup (depending on your preference)

1 tbsp rice vinegar

1 tbsp sesame oil

2 cloves garlic, minced

1 tsp ginger, freshly grated

1 tsp cornstarch

1/4 tsp black pepper

2 tbsp green onions, finely chopped (for garnish)

1 tbsp sesame seeds (for garnish)

Prepare the Marinade: In a medium-sized mixing bowl, combine the low-sodium soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, grated ginger, cornstarch, and black pepper. Whisk these ingredients together until they are well blended and the cornstarch is fully dissolved.

    Marinate the Salmon: Cut the salmon fillet into bite-sized pieces, approximately 1-inch cubes. Add these salmon pieces to the marinade, gently tossing them to ensure every piece is well-coated. Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Let it marinate for at least 30 minutes, or for up to 2 hours for a deeper flavor infusion.
