1 cup shredded cheddar cheese

1/2 cup breadcrumbs (substitute with gluten-free if preferred)

2 large eggs

1/4 cup green onions, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Rice the Cauliflower: Start by removing all stems and leaves from the cauliflower. Cut the head into smaller florets, then pulse the florets in a food processor until they achieve a coarse rice-like texture. Alternatively, you can use a box grater to achieve the same result.

    Cook the Cauliflower: Place the riced cauliflower in a microwave-safe bowl and cover it with a damp paper towel. Microwave on high for 4-5 minutes until tender. Once cooked, allow it to cool slightly. To remove excess moisture, use a clean kitchen towel to squeeze the riced cauliflower gently—this step is crucial for crispy tots.

      Mix the Ingredients: In a large mixing bowl, combine the cooked cauliflower, shredded cheddar cheese, breadcrumbs, eggs, finely chopped green onions, garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper. Use a fork or spatula to mix thoroughly until well combined.
